About this Recipe
I once found vegan salmon at a grocery store in the Netherlands, where I lived for a year, and it was pretty good, surprisingly. I remember using it in sushis. But what I didn’t like was the ingredients list. I always try to eat as little processed food as possible, and I was sure there was a way to make healthier vegan salmon myself.
Well, I figured out how my friends! Making salmon with carrots sounded like the saddest thing on earth to me (yep, I was such a big fish fan), but I can’t believe how good this turned out to be.
Ingredients
- 3 large carrots
- 1 tsp salt
- 1 tbsp liquid smoke
- 1 tbsp maple syrup
- 1 tsp miso
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tsp garlic powder
- 2 tbsp nori sheet powder
- 1 tsp lemon juice
- 3 tbsp caper brine
- 2 tbsp vegetable oil
Step by Step Instructions
Step 1
- Fill up a medium pot with cold water and add the carrots (without removing the peel) with 1 tsp of salt.
Step 2
- Bring to a boil and cook for 8-12 minutes, until they are tender but not falling apart.
Step 3
- Cut them into thin slices
Step 4
- In a bowl, mix all the other ingredients and whisk well. You will need a spoon to dissolve the miso properly.
Step 5
- Add the carrots slices to the marinade and store in the fridge for a few hours or overnight.
This vegan smoked salmon is AMAZING in this bagel recipe, but you could also use it in sushis, salads, pasta, etc.
