About this Recipe
Making this recipe is less complicated than it can appear. The sauce is ready in no time, you can caramelize the onions while you prepare the cauliflowers, and everything comes together nicely at the end.
A cauliflower head will give you about 3-4 slices, but make sure to also use the remaining florets so that you don’t waste anything.
Ingredients
- 1 cauliflower head
- For the marinade:
- 1 cup vegan buttermilk (see notes)
- 2 tsp flour
- 1 tbsp cornstarch
- Breadcrumbs, as needed
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp dried sage
- Salt & pepper
- For the sauce:
- 3/4 cup vegan yogurt
- 1/4 cup vegan mayo
- 1 garlic clove
- 1 tsp lemon juice
- 1 tsp dried sage
- 1 tsp onion powder
- Salt & pepper
- For the shallots:
- 3 big shallots
- 2 tsp brown sugar or maple syrup
- 1 tbsp balsamic vinegar
Chili flakes, to garnish
* Note: For the vegan buttermilk, simply mix one cup of soy milk with one tbsp of lemon juice. Wait a minute, and there you go!
Step by Step Instructions
For the cauliflowers:
Step 1
- Pre-heat the oven to 425 degrees.
Step 2
- Wash and slice the cauliflower. You should get around 3 steaks out of one cauliflower. The outer slices will fall apart but you can still roast the florets like the rest.
Step 3
- Mix together all the marinade ingredients, except the breadcrumbs. Season to taste.
Step 4
- Toss the cauliflower slices in the marinade, then in the breadcrumbs.
Step 5
- Line a parchment paper and spray it with oil.
Step 6
- Roast the cauliflower in the oven for 30 min, turning them over halfway through the cooking process (you can also fry them directly in a pan if you prefer).
For the sauce:
Step 1

Finely chop the garlic.

Mix it with all the remaining ingredients for the sauce.
For the shallots:

Finely slice the shallots.
Step 2
- Grill them for 8-10 minutes in oil or until they start to caramelize.
Step 3

Add the brown sugar and balsamic vinegar.

Cook for another minute.
