As we all know, holiday menus are often lavish and indulgent. This is definitely the time of year to indulge, but a fresh salad is always more than welcome on the table!
The marriage of all the ingredients in this salad is absolutely perfect. The pomegranate and clementines make it super fresh, there is a nice crunch from the pecans, and the feta is a perfect creamy addition. You could use oranges, mandarines, or any other winter fruit of your choice if you don’t have clementines on hand. I would recommend fresh fruits over canned fruits.
You could also use walnuts or almonds instead of pecans.
Ingredients
- 4 cups spring mix salad
- 2 clementines, peeled
- 1/2 cup pecans
- 1/3 cup pomegranate seeds
- 1/2 cup vegan feta, crumbled with hands
For the dressing:

- 6 tbsp canola oil
- 1 tbsp maple syrup
- 1 tbsp lemon juice
- 1 tbsp balsamic vinegar
- 1 tsp dijon mustard
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt & pepper to taste
Step by Step Instructions
One:

Mix together all the ingredients for the dressing, ideally in a small mason jar. Place the lid on the jar and shake well. You can also whisk it in a bowl, but the jar is nicer to store.
Two:

On a large shallow plate, place the mixed salad, clementines, pecans, pomegranate seeds, and feta.
Three:

Just before serving the salad, drizzle the amount of dressing desired on top of it.
Don’t do it too early, as the salad will become wet and unappealing. You can store any dressing left over in the fridge. Enjoy immediately!
