About this Recipe
Garlic mushroom pasta is a classic, and I’ve been wondering how I could make it vegan without losing the creaminess and flavor of the original version for a while. I tried good versions of creamy pasta in the past, but it was never a Wow! for me.
This recipe totally changed the game! Trust me you will want to make it over and over again. It’s now a week classic at home. You could definitely add small dice of marinated tofu or tempeh to it for more proteins.
Ingredients

2 tbsp olive oil

1 yellow onion

5 garlic cloves

227g mushrooms of your choice (I used cremini)

1 cup vegan cream

1/4 cup cooking water

2 tbsp nutritional yeast

1 tsp thyme
-
1/2 tsp chili flakes
-
1/2 tsp Salt
-
Pepper to taste
250g pasta of your choice
Step by Step Instructions
Step 1

Cook the pasta according to the package instructions.
Step 2

Finely chop the onions and the garlic.
Step 3

Clean and slice the mushrooms.
Step 4

Sauté the onions for 3-4 minutes on medium heat.
Step 5

Add the mushrooms and the garlic and sauté until brown and nice, about 5 min.
Step 6

Add in the cream, nutritional yeast, cooking water, chili flakes, and thyme.
Step 7

Season, and cook for another 3-4 minutes.
Step 8

Add in the cooked pasta, stir and serve!
