Fresh White Bean & Tomato Salad Recipe
Can you feel it? Spring is in the air, and it’s calling for fresh salads! I don’t know about you, but I’m all about embracing those fresh, sunny vibes in the kitchen. There’s something magical about this time of year – the birds chirping, the flowers blooming, and of course, the delicious seasonal produce popping up at every corner.
We sowed some cherry tomatoes and herbs indoor last week, hoping to grow them this summer on our tiny balcony. (We are experimenting!) Living in the city is full of advantages, but I can’t wait to move back in the nature. I DREAM of having my own big garden and greenhouse.
All that being said, I’m thrilled to share one of my go-to springtime recipes with you today: a mouthwatering white bean and tomato salad that’s as easy and quick to make as it is tasty. It’s the kind of dish that screams “picnic in the park” or “backyard barbecue,” but hey, you don’t need a special occasion to whip up something delicious!

A little note about the cheese in this recipe. You could really use many different cheeses, I personally used vegan cream cheese because that’s what I had on hand. I’m a big fan of this brand, but use your favorite one!
Fresh White Beans and Tomato Salad
Delicious, fresh white beans and tomato summery salad.
Ingredients
- 1 can (540 ml) of white beans, rinsed
- 1 cup cherry tomatoes, halved
- 1/2 small red onion, thinly sliced into half-moons
- 1/4 cup cheese of your choice, such as vegan cream cheese, buffalo, feta, etc.
- 1 tablespoon lemon juice
- Drizzle of olive oil
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh thyme to garnish
Instructions
- 1. In a mixing bowl, combine the rinsed white beans, halved cherry tomatoes, thinly sliced red onion, and the cheese of your choice.
2. Drizzle the lemon juice and olive oil over the mixture.
3. Sprinkle with dried oregano, salt, and pepper according to your taste preferences.
4. Gently toss all the ingredients together until well combined.
5. Transfer the salad to a serving dish.
6. Garnish with fresh thyme leaves.
7. Serve immediately or refrigerate for a while to let the flavors meld together before serving. Enjoy your fresh and flavorful bean salad!
