About this Recipe

These vegan pancakes are seriously good and super filling. We love eating them in the morning and getting creative with the toppings.

For this recipe, I made a cinnamon-maple-syrup version, a choco-banana version, and a berries version. The possibilities are endless. If you omit the cinnamon, maple syrup, and vanilla extract in the preparation, you could also turn this sweet recipe into a savory one.

Simply add your favorite grilled vegetables on top, with vegan cheese, plain yogurt, fresh herbs, or any other ideas of your choice.

Ingredients

For the wet ingredients:

    • 500g silken tofu
    • 2 1/2 cups oat milk (or other plant-based milk of your choice)
    • 3 tbsp maple syrup
    • 1 tbsp vanilla extract
    • 1 tbsp apple cider vinegar

For the dry ingredients:

      • 6 cups all-purpose flour or whole wheat flour
      • 1 tbsp baking powder
      • 1 1/2 tsp baking soda
      • 1/4 tsp salt
      • 2 tsp ground cinnamon, optional 
      • About 2 tbsp neutral-flavored oil, to fry

Topping Ideas:

      • Frozen or fresh berries
      • Powder sugar
      • Maple Syrup
      • Cinnamon
      • Chocolate Spread or melted chocolate
      • Bananas

Step by Step Instructions

One:

  • To a blender or food processor, add the tofu, milk, maple syrup, vanilla extract, and apple cider vinegar. Blend until smooth. 

Two:

  • Mix the flour, baking powder, baking soda, and salt in a large bowl. Add the cinnamon if desired.

Three:

  • Add the wet ingredients from the blender to the bowl with the dried ingredients. Mix together, but make sure not to over-mix. If the mixture is too thick, add a bit of milk until the consistency is nice and smooth. 

Four:

  • In a large pan, heat up the oil. To measure the portion of one pancake, use a 1/4 measuring cup. Fry as many pancakes as you can fit in the pan for about 2-3 minutes on each side, until golden and cooked through. 

Five:

  • Top them with your favorite ingredients. If you use frozen berries, warm them up in a small pan. They will become very juicy while cooking, so you will get a nice coulis when serving.
