About this Recipe
When I was a kid, my grandma used to make amazing bruschetta every time we would go there for dinner. It was by far one of my favorite appetizers, so I decided to recreate my own version.
This recipe is such an excellent appetizer when you have friends or family over! You can make it in advance and simply toast and garnish the bread when the time comes. Everyone will love it.
Ingredients
- For the bruschetta:
- 1 big tomato
- 2 tbsp red onions, finely chopped
- 1 tbsp olive oil
- 1 tsp red wine vinegar
- 1/2 tsp garlic powder
- 1 tsp dried Italian herbs
- 1/2 tsp salt
- Pepper, to taste
- For the bread:
- 4-5 slices of bread
- Olive oil as needed
- Vegan mayo
- Fresh basil, to garnish
Step by Step Instructions
Step 1
- Set the oven to broil.
Step 2
- Dice the tomatoes and the onions into very small pieces.
Step 3
- Add all the remaining ingredients for the bruschetta and mix well.
Step 4
- Put a little oil on the slices of bread and broil for one minute. Flip the slices and broil for an extra 30 seconds.
Step 5
- Spread some vegan mayo on the bread, add the bruschetta mix and garnish with fresh basil. Enjoy!
