I have to make a confession here… I hate bananas. Like, I hate them. I usually can’t eat or drink anything containing that fruit. Seriously. But that was until I made that banana bread for my boyfriend, who insisted so much on creating a recipe. I felt pretty uninspired at first, but the result is seriously impressive and, I will admit it, totally delicious!
To be enjoyed with a cup of tea as an afternoon snack or as a nice dessert!
Ingredients
Wet Ingredients:
- 3 very ripe bananas
- 1/3 cup neutral flavored oil
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Dry Ingredients:
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup vegan chocolate chips
Step by Step Instructions
Step 1
- Preheat the oven to 350 degrees and cover a 8 x 4 inches baking dish with parchment paper.
Step 2
- Mix all the dry ingredients together in a mixing bowl.
Step 3
- Mash the bananas and mix all the wet ingredients together in another mixing bowl. Combine both mixtures, without overmixing them.
Step 4
- Put the batter in the baking dish and bake for 30 to 35 minutes. I like to check it once in a while with a wooden stick to make sure it’s cooked through. If the top gets golden brown but the middle still needs to cook for a while, cover the bread with foil for the remaining cooking time.
Step 5
- Let it cool down for 10 minutes before serving. Enjoy!
