About this Recipe
If you are looking for the perfect soup to serve on Christmas, search no more! This soup is not only vegan, but it also looks very fancy without being complicated to prepare at all.
The mushrooms I used for this recipe were mainly a mix of fresh cremini, portobello, chanterelle, and oyster mushrooms. I saved some for the topping, and it looks beautiful with the cream and truffle oil. But don’t worry if you only have regular mushrooms on hand, the result will still be excellent!
Ingredients
- 1 tbsp olive oil
- 1 yellow onion, roughly chopped
- 2 garlic cloves, chopped
- 1 bay leaf
- 550g mushrooms of your choice in quarters (I used a mix of mushrooms, but you could use simple white mushrooms as well).
- 1/2 cup white wine
- 3 cups oat milk
- 1/3 cup soy cream or any vegan cream (more to garnish)
- 1 tbsp soy sauce
- 2 tsp balsamic vinegar
- Chili flakes
- Salt & pepper to taste
To garnish:
- 1 tbsp butter
- About 100g mixed mushrooms, chopped to your liking.
- Fresh Thyme
- Dark truffle tapenade or truffle oil (optional)
Step by Step Instructions
One:

In a large soup pot, sauté the onion for about 3-4 minutes, until tender.

Add the garlic and the mushrooms, season, and cook until nice and brown, about 6 minutes. Avoid over-mixing them so they don’t boil in their water while cooking. You want them to grill nicely.

Deglaze the pan with the white wine.

When most of the wine has evaporated, add the milk and the bay leaf, season, and cook for about 10 minutes.

While the soup is cooking, melt the butter in a pan and add the remaining mushrooms you kept to garnish. Let them brown nicely once again, add the thyme, and season them to taste.

When the soup is ready, add the soy sauce, the balsamic vinegar, and the cream.

Remove the bay leaf.

Blend with a hand blender or a big blender, until the soup is super smooth and creamy. Adjust the seasoning to your liking. This is an important step!

Garnish with the mushrooms, chili flakes, cream, and truffle oil or truffle tapenade to bring the soup to the next level!
