About this Recipe

Starting to eat more plant-based food can be overwhelming at first. It’s important to know a few simple, versatile recipes that you can make quickly and easily. This cashew spread is a perfect example of an absolutely delicious option that only requires 4 ingredients. It’s amazing on avocado toast, crackers, bagels, sandwiches, etc.

It’s high in protein and super healthy. I love to add it to my avocado toasts in the morning, with tomatoes, sprouts, etc. It adds a ton of flavor!

Simple tips and tricks

  • Cashews: If you don’t have a very strong blender (like a Vitamix), you will need to soak your cashews in boiling water for about 15 minutes before you blend them. I rarely soak cashews overnight, as I don’t think it’s necessary, but you could also choose this option. The goal is to soften them as much as possible so that they blend better.

 

  • Nutritional Yeast: This ingredient will give a cheesy taste to the spread. It is important not to confuse the type of yeast here. Nutritional yeast doesn’t have anything to do with instant yeast. You can find it in most grocery stores, or online.

 

  • Lemon Juice: Adjust the quantity according to your liking.

 

  • Personalize it! You can play with this recipe and add whatever you want to it. A good addition could be chives, or other herbs, chili flakes, paprika, cumin, etc. There are so many possibilities!

Easy Cashew Spread

This is the easiest and most delicious cashew spread. With only 5 ingredients, it’s a high-protein snack and it’s ready in a second. You can eat it on, bagels, crackers, sandwiches, wraps, and so on. 

Ingredients

  • 1 cup of raw cashews
  • 1/4 cup water
  • 2 tbsp lemon juice
  • 2 tbsp nutritional yeast
  • 1 small garlic clove
  • 1/2 tsp salt

Instructions

  1. Soak the cashews in boiling water for about 15 minutes, to soften them. 
  2. Add all the ingredients to a blender, and blend until smooth.
  3. Serve on your favorite crackers, toast, sandwiches, etc!
