Simple tips and tricks

How to make it not slimy: This is a very important one, because oat milk is known to become easily slimy. Why? When you blend it, the blades create heat and the milk warms up a little. This is how the oat starts to get slimy. There are a few ways that are going to help prevent that:

  • Use ice-cold water: I fill up a bowl with water, then add many ice cubes to it and wait for a little. I then measure my cups of water from that bowl, by removing the ice first. Your milk will warm up a lot less by doing that.

  • Don’t over-blend: The longer you blend, the warmer it will get. I suggest blending for 30 to 45 seconds maximum.

  • Don’t press the pulp out to get more liquid: Making oat milk is not like making almond or cashew milk, for example. You don’t want to try to extract all the milk from the pulp. It’s only gonna make things slimy. Just let the milk drip by itself from your strainer/cheesecloth.

  • Avoid touching it with your hands: It’s always best to avoid touching food with your hands, especially in this case. The bacteria that you have on your hands could make the milk go bad faster. It comes back to the previous point: don’t try to extract the milk by squeezing the cloth with your hands!

Never buy expensive plant milk again! You can make it at home so easily. It’s not only cheaper but also healthier.

Ingredients

  • 4 cups filtered ice-cold water
  • 1/4 cup rolled oats
  • 1 1/2 tbsp maple syrup
  • A pinch of salt
  • 1 tsp vanilla extract, optional

Instructions

  1. Put 4 cups of water in a bowl and fill it with ice cubes. Wait a bit until the water gets super cold. Measure 4 cups again, without the ice cubes.
  2. To a blender, add the water, the maple syrup, the vanilla extract, the salt, and the ice-cold water.
  3. Blend for 30 to 45 seconds, but make sure you don't over-blend it! It could make the oat become slimy, something you don’t want!
  4. Place a cheesecloth or a tea towel over a large bowl. If you’re doing this alone, I suggest tapping one side of the bowl and holding the cheesecloth on the other side. Then, slowly pour the milk on the cheesecloth.
  5. When the milk has all gone through it, remove the cheesecloth. You can keep the oat pulp to make cookies, oatmeal, etc. Taste the milk and adjust the maple syrup and the vanilla extract to your liking.
  6. Transfer the milk to the jar of your choice, using a funnel to make it easier.

Notes

Store in the fridge for up to 5 days.

Your milk will separate in the fridge. It's totally normal because it doesn't contain stabilizers or emulsifiers. Just shake it well before serving.

If you have a good blender, you can also use dates instead of maple syrup to sweeten your milk. But a low-quality blender might not be able to properly blend the dates in only 30-45 seconds and you will mostly be left out with pieces staying stuck in the cheesecloth.
